For a variation on this traditional recipe, use muesli instead of the rolled oats and bake in a slice tray. Cut into slices while still warm and decorate with drizzles of melted chocolate from a piping bag.

Biscuit Mix:

  • 1c plain flour
  • 1c sugar
  • 1c coconut
  • 1c rolled oats
  • 5oz butter
  • 1tsp bi-carb soda
  • 1tbs golden syrup
  • 2tbs boiling water



Melt butter, golden syrup and soda in a saucepan over a low heat. Mix dry ingredients together in a large bow. Add the melted syrup mixture and mix thoroughly. Drop teaspoonful of mixture onto greased tray and bake for 6-10 mins in a moderate oven. Bake for less time if you like chewy or longer if you prefer crunchy.
