Apple Crumble Cake

This recipe only makes about 6 cupcakes, or one small 4″ cake suitable for 3-4 people for an afternoon tea. Can also be adapted for Gluten Free.


  • 125g butter (3tbs oil can be substituted)
  • 1 large apple, grated
  • 1 egg
  • 1 tsp vanilla
  • 110g self raising flour (gluten free flour can be substituted)
  • 50g sugar



Beat butter and sugar, add egg and vanilla. Add flour. Pour into prepared tin and add crumble topping.


  • 1c sr flour
  • 1c coconut
  • 1c sugar
  • 2tsp cinnamon
  • butter to mix

Mix all together with enough softened butter to form a crumble, Spread over top of cakes and bake in moderate oven 12-15 minutes or until cooked. Leave to cook in tins for 5 mins before turning out to cool completely.
