Banana & White Chocolate

Using the basic cupcake recipe, take it up a notch with these decadent banana & white chocolate cupcakes complete with coconut frosting.


125g butter

1tsp vanilla

3/4 c caster sugar

2 eggs

1 1/2 c self raising flour

2 bananas, mashed

200g white chocolate chips

1/2c milk


Mash the bananas, if they are not ripe heat in the microwave for about 30 seconds. This will still give the cupcakes a nice banana taste without the overripe taste. Cream the butter & sugar, add the vanilla and eggs one at a time. Alternate the milk and the flour. Add the white chocolate chips and fold. Cook in a moderate oven (180 celcius) for 12-15 mins and allow to cool in the tray for a few minutes before turning out onto a wire rack to cool completely. When cool ice with the coconut frosting.


125g butter

125g Philadelphia Cream Cheese

1 c coconut

2 c icing mixture

Cream the butter and cream cheese together. Add the coconut and the icing sugar. Mix well. Cut holes in the top of the cupcakes or use a cupcake corer. Slightly trim the bottom of this cut out bit to allow room for the filling. Add approximately teaspoon amounts of the frosting to the cupcake and place the lid back. Cover the top of the cupcake with more frosting and add sprinkles to decorate. You may need to use a knife heated in a cup of hot water to help smooth the frosting over the cupcake.
