Basic cupcakes

This is my recipe for basic buttercake style cupcakes. The mixture can also be adapted to make lamingtons, or add different flavours such as chocolate, banana or orange.


125 g butter

1tsp vanilla

3/4 c sugar

2 eggs

1 1/2 c self raising flour

1/2 c milk


Cream butter and sugar, add vanilla and eggs one at a time. Add the flour and the milk alternatively. Drop spoonfuls into prepared patty pan or cupcake tray with liners and bake in moderate (180 celcius) oven for about 12-15 mins or until cooked. Test with a skewer and leave to cool in tin for a few minutes before turning out onto a cooling tray.
