Cherry Ripe Frosting

Based on the basic chocolate cupcake recipe, delicious and decadent with creamy cherry ripe filling and centres.

Bake chocolate fudge cupcakes (for recipe for cakes

Instead of the chocolate fudge filling and ganache use the following:

Cherry Ripe Frosting:

  • 125g butter
  • 125g Philladelphia cream cheese
  • 2 Cherry Ripes, chopped
  • 3c icing sugar

Beat the butter, cheese and sugar together until light and creamy. Chop the Cherry Ripes in a food processor and blend into the icing mixture. Fill the cupcakes and frost with the cherry ripe cream and decorate with more chopped Cherry Ripe or chocolate curls
