Chocolate Fudge

Delicious Decadent Chocolate Fudge. Chocolate cake with chocolate chips, covered and filled with a chocolate filling. A chocolate lovers dream. Based on the basic cupcake recipe.

Cake:

125g butter

1 tsp vanilla

3/4 c caster sugar

2 eggs

1 1/2 c self raising flour

1/2 c milk

2/3 c cocoa

1/2 c hot water

200g chocolate chips

Method:

Dissolve the cocoa in the hot water and set aside to cool. Cream the butter and sugar, add vanilla and eggs one at a time. Add the cocoa mixture, milk and flour alternatively. Fold in the chocolate chips. Spoon into prepared patty pan or cupcake tins with liners or a large greased and lined  8″ cake tin if making normal cake. Bake in moderate oven 12-15 mins for cupcakes or 35-40 mins for large cake. Test with skewer. Leave to cool in tin for 5-10 mins before turning out onto a wire rack to cool completely.

 

Frosting:

125g butter

2 1/2 c icing sugar

3 tbs cocoa

3 tbs hot water

Dissolve the cocoa in the hot water and set aside to cool. Cream the butter and icing sugar together. Fold in the chocolate mixture. Cut holes in the cupcakes and fill. with the mixture.

Ganache:

Cover the entire cake with a chocolate ganache. Melt 250g dark chocolate chips and 1/3 c thickened cream in the microwave and mix until thick and creamy. Pour over cupcakes and allow to drizzle down the side. Decorate with chocolate curls.
