Coffee & Walnut

Looking for something perfect for afternoon tea? Try these totally delicious and adult only coffee and walnut cupcakes. Be warned, there are 5 teaspoons of coffee in this delectable mixture.


  • 125g butter
  • 1 tsp vanilla
  • 3/4 c sugar
  • 2 eggs
  • 1 1/2 c self raising flour
  • 1/2 c milk
  • 2 tsp instant coffee
  • 1/4 c hot water



Dissolve the coffee in the hot water and set aside to cool. Cream the butter and the sugar, add vanilla and eggs one at a time. Add the cold coffee. Alternate the milk and flour. Bake in moderate oven for 12-15 mins. Leave to cool in tray for 5 mins before turning out onto wire tray to cool completely.


Coffee Glaze:

  • 2c icing sugar
  • 1 tsp instant coffee
  • 2 tbls milk

Mix together over a low heat, be careful not to burn the sugar. Spread thickly over cupcakes and decorate with chopped walnuts. You will need to work quickly or the glaze will set rapidly.


Coffee Buttercream Filling:

Once the glaze has set, create the butter cream by mixing together:

  • 2 cups icing sugar
  • 2 tsp instant coffee
  • 125g butter, softened

Cut holes in the top of the cupcakes, trying not to disturb the walnuts and fill with approximately tsp of the filling. Place the top back on the cupcakes and set aside to serve.
