Coconut Ice

A traditional family favourite.

  • 4 c sugar
  • 2 c coconut
  • 1 c milk
  • 1tsp vanilla
  • red food colouring

Boil milk and sugar together until it reaches a rolling boil and allow to cool slightly. Add coconut & vanilla. Divide mixture in half, by placing half mixture in a slice tray and add 1-2 drops of red food colouring to the other half to make pink. Place pink mixture on top of white and leave in fridge to set.
